With the grilling season upon us, there is no better way to spend a summer afternoon than eating with family and friends. While classic choices like hamburgers, ribs, brisket, and hot dogs are delicious and classic summer choices, those looking for a low fat and high protein choice need look no further – Just Bare(TM) chicken breasts make an excellent addition to any barbeque cook out. With their tender, juicy texture and subtle savory taste, Just Bare(TM) chicken breasts pair excellently with your favorite marinade, sauce, or seasoning blend from Mackenthun’s Fine Foods.
Nutritional Benefits
Chicken breasts are high in protein while being low in saturated fat, which makes them a great choice for supporting weight loss goals, managing chronic conditions like high blood pressure and diabetes. Chicken is high in B vitamins such as vitamin B3, B6, and B12 which are important for supporting metabolism, and maintaining healthy skin and nerves. Chicken is also high in minerals such as iron, potassium, and zinc. These vitamins and minerals support brain health, immune support, energy production, and many other vital body functions.
There are many delicious ways to use Just Bare(TM) chicken breasts this summer and beyond. My favorite recipe is grilled Tandoori Chicken, a popular Indian dish which uses Greek yogurt and lots of spices and herbs to create a tender, juicy, and smoky flavor and texture. Tandoori Chicken is delicious in its traditional form with rice and mint chutney, but also makes great chicken salad, soup, sandwiches, or tacos.

What You Need
- 1-1/2 lbs of chicken breasts
- ½ cup Greek yogurt
- ½ Tbsp ginger (paste or chopped)
- ½ Tbsp garlic (paste or chopped)
- 1 tsp garam masala
- 1 tsp Kashmiri red chili powder (or paprika)
- ¼ tsp ground black pepper
- 1 ½ tsp coriander powder
- ½ tsp cumin powder
- ½ tsp salt
- ¼ tsp turmeric
- 1 tsp dried fenugreek
- 1 Tbsp lemon juice
- 1 ½ Tbsp oil (avocado, canola, safflower…)

What You Do
- In a large mixing bowl, combine yogurt, ginger, garlic, garam masala, red chili powder or paprika, salt, turmeric, fenugreek, black pepper, coriander powder, cumin powder, oil, and lemon juice.
- Use a sharp knife to cut slits into the chicken breasts, about 5 slits per breast. Add chicken breasts to marinade and coat them well. Cover and refrigerate for at least 6 hours or overnight.
- After the chicken has finished marinating, start your grill, and keep it covered until it reaches 500 degrees.
- Shake off excess marinade before placing chicken on the grill. Cook with the grill covered. You may need to turn the chicken often to prevent the marinade from burning, so keep a close eye on it! The chicken is ready when the internal temperature reaches 165 degrees F for at least 15 seconds.
- Serve with rice and fresh sliced vegetables like cucumber and red onion. Delicious Indian dips like raita or chutneys with mint or coriander pair well with this dish and can be fun and easy to make.
