A common breakfast item that many people enjoy is a good yogurt parfait, but did you know that not all yogurt’s are created equal? Greek yogurt has a thicker texture and has more of a tart taste but is lower in sodium and sugar and richer in protein compared to
regular yogurt. Similar to regular yogurt, greek yogurt is also low in fat and contains other nutrients such as calcium which can be beneficial for bone strength and heart health.

There are lots of different ways you can use greek yogurt beyond that breakfast parfait that are yummy and a great way to reduce the fat content in your foods. Greek yogurt is a great substitute for sour cream or milk and eggs. For breakfast, I love to use greek
yogurt to make an easy bagel recipe:

As the Big Game fast approaches, use Greek yogurt to make a dip for taco stuffed shells in the recipe below:

Air Fryer Taco Stuffed Shells

By Abby Gelineau

What You Need

  • Jumbo shell pasta
  • 1 lb ground beef
  • ½ yellow or white onion, diced
  • ½ green bell pepper, diced
  • 2 packets of taco seasoning
  • Salsa
  • Block of cheese (cheddar, colby jack, pepperjack, etc.), ½ cm thick slices
  • Vegetable oil/canola oil spray
  • Chobani® Nonfat Plain Greek Yogurt
  • Scallions

What You Do

  1. Boil pasta according to box instructions. Once done, drain the water and rinse the pasta shells under cold water (this prevents them from sticking together and tearing). Set aside.
  2. Cook the ground beef, onion, and green bell pepper on the stove in a pan. Once beef is cooked all the way through (to a temperature of 160F), drain the fat and add in 1 packet of taco seasoning with ¼ cup water. Stir on low heat until the
seasoning is mixed in with the meat mixture.
  3. Take a pasta shell, scoop out a spoonful of the meat mixture and place inside the shell. Put one scoop of salsa on top of the meat mixture. Lastly, put one slice of cheese on top of the salsa. Take another pasta shell and place over the opening of the stuffed shell to enclose the stuffing mixture. Place on a plate to the side.
  4. Repeat this process until you have used up your ingredients.
  5. Take your vegetable or canola oil spray and spray over all the enclosed shells on your plate.
  6. Preheat your air fryer to 400F. Place your shells in the air fryer basket and fry for 15-20 minutes.
  7. While those cook, take your Greek yogurt and scoop out ½ cup into a bowl. Measure out 3 Tbsp of taco seasoning and mix it with the yogurt until thoroughly combined. Garnish with thinly sliced scallions. This makes your taco dip for your stuffed shells!
